Simple Nigerian Fried Rice
A simple healthy recipe with complex rich flavours, the perfect rice dish to incorporate more vegetables into your diet!
Ingredients:
- ● 2 cups of family rice
- ● 2 cups of mixed vegetables
- ● 2-4 tablespoons of oil
- ● 3 cups of chicken stock
- ● 1 cup of water
- ● Seasonings and spices
Method:
- ● Step 1: Add washed rice to a pot of seasoned chicken stock and water, and boil for 25 minutes. (The chicken stock should be seasoned with salt, pepper, curry powder, thyme, onion, garlic, and stock cubes). (Optionally, add a dash of turmeric and curry powder to the boiling rice for a stronger hue)
- ● Step 2: dice and stir fry vegetables in oil for 3-5 minutes, and season to taste.
- ● Step 3: add boiled rice to the vegetables, small portions at a time, and stir fry for another 3-5 minutes.
